Ingredients
  

  • 2 cups fresh pineapple chunks firm and ripe
  • 10 leaves fresh mint leaves bruised to release oils
  • 1 lime lime for juice
  • 2 tablespoons honey or agave syrup
  • 0.5 cup water or coconut water

  • Silicone molds
  • Small saucepan
  • Sticks

Method
 

  1. Place the pineapple chunks in a blender and pulse a few times to break them down slightly.
  2. Add the bruised mint leaves, the juice of the lime, honey, and water to the blender.
  3. Blend everything on high until the mixture is smooth, vibrant, and slightly frothy, about 30 seconds.
  4. Taste the mixture and adjust sweetness if needed by adding more honey or lime juice.
  5. Pour the blended pineapple mixture into silicone molds, filling each about three-quarters full to leave space for expansion.
  6. Insert sticks into the molds, ensuring they are centered and upright.
  7. Place the molds in the freezer and freeze for at least 4 hours, preferably overnight, until fully solid.
  8. When ready to serve, run warm water briefly around the outside of each mold to loosen the popsicles.
  9. Gently pull the popsicles out of the molds and enjoy their bright, tropical flavor and refreshing coolness.
