- Preheat your oven to 200°C (390°F), and line a baking sheet with parchment paper.
- Unfold the puff pastry onto a lightly floured surface. Using a round cookie cutter, cut out 24 circles about 3 inches in diameter.
- Gently press each pastry circle into the cups of a greased mini muffin tin, ensuring they fit snugly and hold their shape.
- Slice the Brie cheese into thin pieces, about 1/8 inch thick, to make melting easier and more even.
- Place a small piece of Brie into each pastry cup, followed by a teaspoon of cranberry sauce or a few whole cranberries. Sprinkle with a tiny bit of sugar or honey if you like extra sweetness.
- Bake in the preheated oven for about 15 minutes, until the pastry edges are golden brown, and the cheese is bubbling and soft.
- Remove from the oven and let the bites cool for 5 minutes on a cooling rack — this helps the cheese set slightly and makes handling easier.
