  • 8 oz Brie cheese slice thinly
  • 1/2 cup cranberry sauce or whole cranberries
  • 1 tbsp sugar or honey optional for sweetness

Method
 

  1. Preheat your oven to 200°C (390°F), and line a baking sheet with parchment paper.
  2. Unfold the puff pastry onto a lightly floured surface. Using a round cookie cutter, cut out 24 circles about 3 inches in diameter.
  3. Gently press each pastry circle into the cups of a greased mini muffin tin, ensuring they fit snugly and hold their shape.
  4. Slice the Brie cheese into thin pieces, about 1/8 inch thick, to make melting easier and more even.
  5. Place a small piece of Brie into each pastry cup, followed by a teaspoon of cranberry sauce or a few whole cranberries. Sprinkle with a tiny bit of sugar or honey if you like extra sweetness.
  6. Bake in the preheated oven for about 15 minutes, until the pastry edges are golden brown, and the cheese is bubbling and soft.
  7. Remove from the oven and let the bites cool for 5 minutes on a cooling rack — this helps the cheese set slightly and makes handling easier.
